Tasting: From Sierra de Gredos natural wine maestro Daniel V. Ramos, a self-described ‘Span-Aussie’ (born in Australia to Spanish parents, then grew up in Madrid). Daniel builds texture into this wine with 17 days of skin contact. An exceptionally interesting wine showing green apple and grapefruit skin. Green tea tannins and fresh salinity. Daniel’s vineyards are organically tended, his wines are made with a minimal intervention philosophy, small levels of sulphur used at bottling only, and his wines are also bottled un-fined and unfiltered.
