We view the RAW Wine Movement under the umbrella of organic, biodynamic and natural, because it's not one style of wine but the philosophy as a whole. Organic and biodynamic principles relate primarily to farming, and low intervention / natural relates to the wine making process and the final product. We like to work with winemakers whose ethos are closely aligned with ours and just because a wine has a tiny number of sulphites, we’re not going to ignore it.
Celler Les Foes L'Adolescent $58 Region: Valencia Grapes: Monastrell, Garnatxa, Syrah Vintage: 2018 Celler Les Foes is a tiny 3 hectare estate in Castellón working with old vine indigenous varieties. The vineyards are tended organically with no herbicides or pesticides and this is followed up with a minimal intervention approach in the cellar, so no sulphur at any stage.
L'Adolescent is a blend of hand harvested Monastrell, Garnatxa and Syrah bottled without fining or filtration. It's fragrant and herbal with touches of wood spice and great depth of fruit.

From old vine Garnacha (60yo) in the Gredos hills, the 'Kappi' Amphorae is an uber traditional wine, in terms of production. The wine is made in large clay tinajas, of approximately 1000L in volume. This natural and very slow fermentation and gentle maceration is key. From harvest in September, the wine takes a month to ferment to dryness, and is then left with the skins until the following summer (usually July). The cap slowly sinks through the vessel, acting as a natural filter.

The grapes for this young Verdjo ripen on two different plots in Nieva; a sandy bottom and a sandy bottom with gravel. "La Banda del Argílico" are bands that are used on the soil of the vineyards to act as a buffer so that as little moisture as possible evaporates. This wine is the result of two harvests, the first aiming for freshness, low pH and low alcohol, and the second for maturity, finesse and fruit. The wine then matures on the fine lees for another 5 ½ months.
Tasting:- The interaction of the two musts creates the magic and harmony of this spicy, strong, yellow-fruity and somewhat salty Verdejo. It’s not the classic Verdejo that many expect, but it’s damn delicious

We've chosen 3 different parts of Spain to showcase different varietals and the Terroir. These wines are generally slightly savoury, and with their fine tannins we find these reds more agreeable for a wider range of food matching possibilities.

La Casilla de Adrián 2016 - $45 Btl
Tasting: An indigenous grape variety in Spain’s southeast, Bobal has a chequered past. When over irrigated it can produce very large volumes of fruit, over cropped vines produce bland, sub-standard fruit. This coupled with its extremely good disease resistance has meant that it has been used extensively for poor quality bulk wine. However, in the right hands, with yields kept low, Bobal can produce exceptionally beguiling wines. A medium bodied wine with silky smooth tannin, that wraps around a core of earthy blueberry, smoked cacao, cassis and minerals.
Tasting: Translated the name of this wine means 790 sins, referring to the 790 days it takes from harvesting to release, each day a sin that this wine can’t be enjoyed yet! Organically and biodynamically grown in Catalunya’s Penedès region, west of Barcelona, Loxarel have been dedicated to sustainable production since their inception. Full bodied with sumptuous flavours of ripe, candied black fruit, raspberries, black plums, all wrapped around a core of soft yet present tannins, and notes of cacao and coffee.

Ambar 1900 is a subtle beer that is full of aromas. It is smooth on the palate, with a pale colour and fine bubbles, and its amount of nuances is surprising. The fresh fruit from the high temperature fermentation predominates on the nose. It was the first ale in Spain and is still one of the most sophisticated.
Ambar 1900 Pale Ale is made with high temperature fermentation which reveals the fullness of aroma from the yeast. Pale in colour and with a fine froth, this ale is gentle on the palate and has the flavour of fresh fruit and the aroma of freshly-roasted malt. They are part of the movement of reviving non fortified table wine from what is traditionally Sherry country.
