Tasting: D.O. Pago is a single site appellation, awarded to estates of exceptional, consistent excellence. D.O. Pago Dehesa del Carrizal is south of Madrid in the foothills of the Sierra de Toledo. This wine couldn’t be more straight up and down Cabernet Sauvignon! A nose of pure, black fruit, tomato leaf and toasted cedar, with a palate that shows lashings of blackberry, cassis, green capsicum, fresh tobacco and leather. Full bodied but with perfectly balanced tannin and acidity.
