Xosé wears two hats, the first as winemaker at Coto de Gomariz, Ribeiro where after starting in 2000 he quickly converted the vineyards to organic farming with biodynamic principles. From their 28 hectares of vines, they make whites based on local champion treixadura, often blended with albariño, godello and loureira, and red blends with sousón, ferrol, branellao and mencía.His second hat is his personal project - Viño de Encostas, translated it means ‘Wines of the Hills’. Sourcing vineyards all over northwest Spain, off the beaten track and often outside of D.O. boundaries they are farmed organically and biodynamically. Wines are made employing old oak only, light filtration and minimal sulphur and represent the truest essence of the land from which they are raised.

This blend of indigenous red Galician varieties is light bodied, but with breadth and texture, with notes of violets, lilac, blackcurrants, black pepper, delicate incense like spices and slate. Tasting: Xosé Lois Sebio’s Viño de Encostas project focuses on fruit from old vines in vineyards that are farmed organically and biodynamically, often outside of traditional growing areas. The grapes for this wine come from an old hillside plot on top of an abandoned tungsten mine. Quintessentially Albariño, but with a little more breadth and texture, expressive toasted lemon, delicately ripe white apricot, driving acidity and a delicious saline finish.

The Mencía for Coios comes from the slopes of O Val in Valtuille, Bierzo, Xosé looks to source fruit at altitude to produce wines of exceptional freshness. Light bodied, but with the additional depth and ripeness that Bierzo brings, a nose of black earth, bramble fruits and spice is backed by a sumptuous yet refreshing palate of fresh, acidic blackberries, blackcurrant bush, slate and fine grained tannins.
