Xosé wears two hats, the first as winemaker at Coto de Gomariz, Ribeiro where after starting in 2000 he quickly converted the vineyards to organic farming with biodynamic principles. From their 28 hectares of vines, they make whites based on local champion treixadura, often blended with albariño, godello and loureira, and red blends with sousón, ferrol, branellao and mencía.His second hat is his personal project - Viño de Encostas, translated it means ‘Wines of the Hills’. Sourcing vineyards all over northwest Spain, off the beaten track and often outside of D.O. boundaries they are farmed organically and biodynamically. Wines are made employing old oak only, light filtration and minimal sulphur and represent the truest essence of the land from which they are raised.

Tasting: Xosé Lois Sebio’s Viño de Encostas project focuses on fruit from old vines in vineyards that are farmed organically and biodynamically, often outside of traditional growing areas. The grapes for this wine come from an old hillside plot on top of an abandoned tungsten mine. Quintessentially Albariño, but with a little more breadth and texture, expressive toasted lemon, delicately ripe white apricot, driving acidity and a delicious saline finish.
