Tasting: D.O. Pago is a single site appellation, awarded to estates of exceptional, consistent excellence. D.O. Pago Dehesa del Carrizal is south of Madrid in the foothills of the Sierra de Toledo. This is and always has been a contender for one of the best Chardonnay’s in Spain. An oak fermented and matured Chardonnay that successfully walks the line of positive oak character, perfectly balanced without being overbearing. Aromas of ripe stone fruit, fig, cedar and nutmeg rolls delightfully into a palate, broad and textural yet focused, yellow peach, fleshy apricot, green fig, cashew and creamy dairy notes.
