Palomino Fino, but not as you know it!
Bodega Vinificate - Cadiz, Jerez, Spain
The Gomez Lucas brothers make wine in Spain’s southwest, based in San Fernando, Cádiz in the heartland of what has always been Sherry country. Many winemakers have over the past decade or so strived to bring back table wine production to the area. The brothers studied chemistry at university and then decided to make wine with no chemical additions!
The Mahara Dorada, is 100% palomino fino, from the Albariza soils of Pago Mahina in Sanlucar de Barrameda, the fruit is hand harvested, pressed and then fermented and matured in amphora for 9 months, before being bottled un-fined and unfiltered with a small amount of added sulphur only at bottling. Wonderful texture couples with chamomile, green apple, citrus and salinity with a nose of white flowers and sea spray. Only 1846 bottles produced.
